Deliciously Good For You Energy Salad
I recently spent the most amazing and healthiest vacation of my life at Kamalaya Wellness Sanctuary and Holistic Spa Resort in Koh Samui, Thailand.
It was a haven for any health maven or anyone who just wanting to be surrounded by incredible beauty, fresh tropical air, warm and loving people, genuine peace and quiet, and deliciously good-for-you food.
I was obsessed with this Energy Salad while I was there, eating it nearly every day and kind of missing it on the days I didn't.
Without a doubt this salad tastes better under the Thai stars while sitting in the open air restaurant at Kamalaya, but I hope you enjoy it wherever you are.
Mix together the following, varying the quantities as you desire, serve and enjoy.
- Baby Greens
- Dried Garlic
- Goji Berries
- Sunflower seeds (I recently used pumpkin seeds and they were just as delicious.)
- Asian pear
- Flaxseed meal
- Extra Virgin Olive Oil and Vinegar
