Vegetable "Fried" Quinoa (A Gluten-Free Recipe)
In the cold winter months, there's nothing better than some hearty comfort food. Just because a meal fills us up on the inside doesn’t mean it will add inches on the outside. This easy gluten-free recipe for vegetable “fried” quinoa packs 8 amino acids, making it the perfect protein.
Vegetable “Fried” Quinoa
- 1 cup dry quinoa
- ½ tspn sea salt
- 1 ¾ cups water
- ½ cup chopped parsley
- 4 cloves garlic, minced
- 1/3 cup lemon juice
- ¼ cup extra-virgin olive oil
- 2 tablespoons tamari
Thoroughly rinse and drain your quinoa. Place quinoa, water and salt in a pot and bring to a boil. Reduce the heat, cover and simmer for 15 to 20 minutes. Place toasty warm quinoa in a bowl and add all other ingredients. Mix thoroughly and serve immediately for a yummy dish that will warm you from the inside out.
This gluten-free recipe tastes great alone or when paired with a healthy stir fry.
