This super-easy salad gives you those omega-rich ingredients so vital for health, and the healthy oils are particularly good for hair and skin for women over the age of 40.

Easy Summer Salad That's Loaded With Healthy Fats

Serves 2

  • 2 smoked mackerel fillets, skinned and chopped
  • 1 avocado, chopped
  • 2 fistfuls of hearty salad leaves (arugula, spinach, romaine)
  • 2 tablespoons of roasted pumpkin seeds
  • Dressing of your choice

Toss these ingredients together; the hearty flavor of the fish is enhanced by the sweet smoothness of the avocado, and the pumpkin seeds add just the right crunch.

A tangy vinaigrette works very well, as does a jalapeno-based dressing if you like the extra kick of spice.
