Easy Summer Salad That's Loaded With Healthy Fats

Serves 2


  • 2 smoked mackerel fillets, skinned and chopped
  • 1 avocado, chopped
  • 2 fistfuls of hearty salad leaves (arugula, spinach, romaine)
  • 2 tablespoons of roasted pumpkin seeds
  • Dressing of your choice


Toss these ingredients together; the hearty flavor of the fish is enhanced by the sweet smoothness of the avocado, and the pumpkin seeds add just the right crunch.

A tangy vinaigrette works very well, as does a jalapeno-based dressing if you like the extra kick of spice.
