Sweet & Easy Paleo Granola (Vegan, Grain-Free!)

This is a really simple but super tasty granola recipe for us vegan grain-free folks! I cut grains out of my diet recently due to allergies so I've been creating some fun grain-free recipes. This one is a favorite.

Since becoming grain-free, granola is something I really miss, but I've fallen in love with this grain free granola with coconut yogurt and a little fruit...divine! I use xylitol as a sweetener here, but you can use whatever sweetener you prefer and coconut sugar would be nice with this recipe as well. Enjoy!

Grain-Free Vegan Paleo Granola

Ingredients

  • 1 cup raw sunflower seeds
  • 1 cup raw almonds
  • 1/3 cup chia seed
  • 1/4 cup coconut flour
  • 1/2 cup coconut flakes
  • 1 heaping tsp. maca powder
  • 1/8-1/4 tsp. sea salt
  • 3-5 Tbsp. xylitol or coconut sugar (depending on how sweet you prefer)
  • 1 heaping tsp. cinnamon
  • 3/4 cup coconut oil

Directions

Preheat your oven to 350 degrees and line a baking sheet with parchment paper. In a large bowl combine sunflower seeds, almonds, chia, coconut flour, coconut flakes, maca, sea salt, sweetener and cinnamon.

Mix it up well and then add the coconut oil. It's OK if the coconut oil is solid, just use your hands to mash it all together (much like needing dough).

Once the mixture is well combined, transfer to the baking sheet and lay on parchment paper. Lay it out so that it's no more than one inch thick.

Put in the oven for fifteen minutes, take out and toss it around on the pan. Bake for another fifteen to twenty minutes or until golden brown.

Let cool and store in a glass jar. Keeps for up to 3 weeks.
