Summer is almost over, but there's still time to soak up extra sunshine, spend time outdoors, and treat yourself to icy cool summer drinks.

This time of the year is a transition time for many of us, as we move out of the carefree summer mentality and into the focused and hard-working months of the fall.

As you attend your last barbecues, take your last-minute vacations and getaways, and head back to work and school — blend up this healthier take on a piña colada, to beat the end-of-summer blues. It's loaded with immune-boosting super foods like raw coconut, bee pollen, and maca root — reminiscent of those lazy days at the beach. It may taste like summer, but it's also filled with extra nutrition to give you an energizing boost to gear up for fall.

Piña Colada Superfood Smoothie

  • 1 cup frozen pineapple
  • 1 cup raw young coconut meat
  • 1 1/2 cups unsweetened coconut milk
  • 1 tsp. bee pollen
  • 1 tbsp. maca root powder
  • 1 tsp. vanilla extract
  • 4 large ice cubes

Blend until smooth and creamy. Garnish with a piece of fresh pineapple or dried coconut flakes.
