Raw, Vegan, Chocolate Peppermint Brownies

The fall has arrived and the holidays are approaching. Why not treat yourself to some decadent raw vegan peppermint brownies and wow any friends and family who might refer to a raw vegan lifestyle as "weird."

Chocolate Peppermint Brownies
Ingredients
For the brownie layer:
- 1 1/2 cups almond flour
- 1 cup cacao powder
- 1/8 teaspoon nutmeg
- pinch salt
- 1/2 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 water (if necessary)

For the peppermint layer:
- ¼ coconut milk
- 2 tablespoons coconut butter
- 1 cup cashews, soaked
- 1 packet Stevia
- 1 teaspoon peppermint extract
For the chocolate ganache layer
- 1 cup maple syrup
- 1 cup cacao
- 1/3 cup coconut oil
- 1 teaspoon vanilla extract
- pinch salt

Method
For the brownie layer:
- Whisk together the dry ingredients. Separately, whisk together the wet ingredients.
- Combine wet and dry ingredients in large bowl and mix with spatula. If mixture is too dry, add water as necessary. (You don't want the mixture too wet, just wet enough so all the ingredients are fully incorporated).
- Transfer mixture to brownie pan.

For the peppermint layer:
- Blend all ingredients in high-speed blender until smooth & creamy.
- Add on top of brownies and place in fridge to set.
For the chocolate ganache layer
- Blend all ingredients in high-speed blender until smooth & creamy.
- Add on top of brownies and place in fridge to set.
- Garnish with dried coconut flakes and enjoy!
