There's no better time than spring to do a little housecleaning, and this includes your diet. Beets contain compounds called betalains, initiating phase 2 liver detoxification, helping fat-soluble toxins, become water-soluble for easy removal. Nourish your body with an abundance of vitamins, minerals, and antioxidants, and give it a helping hand to gently detoxify. This soup also includes the super-herb, cilantro, a powerful heavy metal detoxifier. Ingredients

  • 1 lb. beets (about 2 large), unpeeled and cut into chunks
  • 1 large carrot, unpeeled and cut into chunks
  • 4 cups water
  • 1/2 cup chopped onion
  • 1/4 cup cilantro, tender stems included
  • 1 clove garlic
  • 3 Tbsp. unsweetened shredded coconut
  • 1/2 Tbsp. coconut oil
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground pepper

Directions

Add all ingredients to a large pot. Bring to a boil, reduce to a simmer, cover, and cook for 25-30 minutes until the beets are tender.

Transfer mixture to a blender or use a hand-held stick blender, and purée until smooth.

Serve hot, or cool for at least 6 hours in the refrigerator for a refreshing, chilled soup. Garnish soup with additional cilantro leaves and shredded coconut, if desired.
