I’ll never forget my first Valentine’s Day after giving up dairy and switching to a more plant-based diet. My husband (then boyfriend) walked in the house with a beautiful flower bouquet and a pound of assorted milk chocolates. I smiled, and he offered me a chocolate, to which I replied “Um, no thank you.” For a second, he looked at me strangely, and then, like a lightbulb went off, he said, “Ohhhhhh. I forgot. Sorry about that.” He then proceeded to attempt to finish the whole pound himself.
The following Valentine’s Day went much smoother. I said I’d provide the chocolate, and whipped up a delicious and creamy chocolate fondue. Plated with assorted fruits, it became an interactive dessert, and we both agreed that vegan chocolate fondue would stay on the Valentine’s Day menu for years to come.
Vegan Chocolate Fondue
- 3/4 cup almond milk (or your favorite nondairy milk)
- 1 1/2 tsp. vanilla extract
- 12 ounces vegan chocolate chips
In a small pan over low heat, combine all ingredients.
Stir often until chocolate chips just start to melt.
Remove pan from heat, and continue to stir until all chocolate is melted and mixture is combined thoroughly.
Pour into a fondue pot or small bowl.
Serve with your favorite fruits (strawberries, grapes, pineapple, banana, etc) and any other bite-sized desserts for dipping!
