Delectable (And Easy!) Raw Chocolate Cake

I love desserts. I love chocolate. And sticky toffee pudding. And pie. Mostly, I love all sweet things and I am obviously not alone. Hence, this dessert selection.

I also love healthy food. I love eating a meal and feeling good after it. Knowing the food I eat is not only mouth-wateringly delicious but that it is going to nourish my insides, digest easily and give me energy.

Unfortunately, desserts don't do that. In fact, they do just the opposite. They slow down digestion and after the sugar hit wears off, can leave you feeling low. I won't even mention the extra calories.

Thankfully, this raw chocolate cake was designed as a remedy for all that ails most dessert recipes!

Delectable (And Easy!) Raw Chocolate Cake

Ingredients for base

  • 1 cup walnuts
  • 1 cup dates

Ingredients for filling

  • 1 cup soaked cashews (overnight)
  • 1/2 cup melted coconut oil
  • 2 heaped Tbsp. raw cacao powder
  • 1/4 cup water
  • Sweetener of your choice: date syrup, honey etc.

Directions for base

Process walnuts to the consistency of granules. Add dates and process to a doughy texture. Not too much or it becomes oily. Press down into a cake tin, refrigerate

Directions for filling

Process cashews, oil, cacao, sweetener (to taste) and add water slowly until it's a smooth cream. Pour over base. Refrigerate for minimum of three hours.

Tip: adding some melted cacao butter to the filling will make it firmer. For that restaurant finish get creative with presentation, dusting with some powdered cacao, adding little slices of fruit to the plate. Good luck!
