Raw Superfood Breakfast Bars
Get your day started with a boost of raw superfood energy! I love thee bars because they take just a few minutes to make, plus they're tastier and more budget-friendly than store-bought bars!
Raw Breakfast Energy Bars
makes 6 bars
- 8 dates, chopped
- 1/4 cup raw sunflower seeds
- 1/4 cup raw almonds
- 1/4 cup shredded coconut
- 1-2 Tbsp. coconut oil, softened
- dash of salt
- 1 Tbsp. chia seeds
- 2 Tbsp. cacao nibs
- optional: coconut butter, softened
Combine dates, sunflower seeds, almonds, shredded coconut, coconut oil and salt in food processor or blender until textured batter is formed (about 2-3 minutes). Start with 1 tablespoon coconut oil and add more if blending is difficult.
Transfer to bowl and stir chia seeds and cacao nibs into batter.
Use hands to form batter into rectangular shape (about 1/2" thick) on baking sheet.
Place in freezer for 10 minutes to harden. Remove and slice into bars.
Drizzle or spread coconut butter on top (if using). Store in refrigerator.
