An Avocado Toast That Will Knock Your Socks Off

Many of you may already be familiar with the unmatched awesomeness of the recipe known as "avocado toast," but I’ve got another variation to add that will knock your woolen winter socks off.

GHEE!

Why avo toast with ghee for breakfast?

The ancient practice of Ayurveda, otherwise known as “the science of life,” calls the fall and winter months “vata” season, after the ethereal quality of the cosmos that is seen in cold, dry, windy weather.

Because we intuitively gravitate towards foods that balance the vata element—warm, oilier, heavier foods—those who are used to the light and cold breakfast fare of green juices and smoothies might find themselves craving something more substantial.

Sure, you can always dive into a warm, thick, sweet, chewy bowl of oats (also great for vata season), but when you’re craving creamy, savory, crunchy, and salty, avo toast is your girl. She’s simple, filling, hearty and oh-so-energizing and nutritious due to the heart-healthy, fiber-rich avocado, whole wheat bread, and of course, the pièce de résistance: glorious ghee.

Slather on just a tiny bit and you’ve just added an unexpected to-die-for dimension of flavor as well as health-promoting properties to (re)boot. Ghee, or clarified butter, has long been revered in Ayurvedic medicine for its unique and restorative effects on digestion and the immune system. Not to mention, although it’s perfect any time of the year, ghee is a venerable vata-balancer, along with the other two characters in our cast.

Avocado, whole wheat, and ghee—a tasty, turn-of-the-season trifecta that technically you can eat for breakfast, lunch, dinner, or anything in between. Give it a go.

“Ayurvedic” Avocado Toast
Serves 2

Ingredients

  • 2 slices of whole wheat bread (I adore Alvarado Street Bakery’s Sprouted Whole Wheat Bread)
  • 1 avocado
  • 2 tsp organic ghee (For a vegan option, substitute Vegenaise or exta-virgin olive oil for ghee)
  • Sea salt & pepper *

Preparation

1. Toast the bread.
2. Spread a teaspoon of ghee on each slice.
3. Mash up avocado to desired consistency. (I like mine chunky). Divide into two equal portions and spread on each slice of toast.
4. Season generously with salt and pepper.

Now you’ve got two slices of Ayurvedic avocado toast. Share one with someone you love.

*For a sweet version, omit salt & pepper. Instead, drizzle honey (also perfect for vata season) on top of avocado toast.

Mmmm, so good!
