This rice dish is savory, sexy, and delicious! I use Lundberg gluten-free organic brown rice, but really any rice would do the trick. So the next time you’re in the mood for a rice dish, whip up some of this! It does take about 50 minutes to cook though, so be sure to give yourself some time. Trust me, it’s worth it.

Gluten-Free, Vegan Tomato Rice Recipe 

Ingredients:

  • 1/2 cup rice
  • 1 cup water
  • 1/2 tsp vegan butter
  • 1/2 cup vegan tomato soup
  • 1/4 cup diced tomatoes
  • chives & pepper to taste

Directions:

Just make the rice as you normally would (rice, water, and vegan butter in pot, cook on low for 40 mins). Then add your soup, tomatoes, chives, and pepper, keep on low for 10 mins, and voila! You have a lovely rice dish. You can also add a dash of cayenne pepper, if you want a little extra kick.
