3 Ten-Second Ways To Use Leftover Turkey

We know you're getting a lot of these today (so we'll keep it short) but, really, there's never too much info on what to do with the piles of turkey most likely sitting in your fridge right now. Besides the requisite turkey sandwich, here are a few of our favorite easy and quick leftover turkey meal ideas.

Salads

We've been loving Julia Sherman's blog Salad for President (and Instagram) for all kinds of salad inspiration.

Turkey can work with a million different greens, but we're particularly into this Grilled Celery iteration. Shred your turkey by pulling the meat away from the bone with a fork, and add it to the grilled celery, hard-boiled eggs, capers and chives. It's kind of like a turkey salad sandwich…salad.

In Stir-Frys

A stir-fry is a great way to grab whatever needs to be used up in the fridge to make a delicious meal, and turkey is a great addition to whatever veggies you have on hand. Since the turkey's already cooked, add it in at the end, when you're adding the last seasonings, and mix to combine it with all the flavors.

Check out Ella Woodward's Perfect Stir-Fry to get you started. This dish comes together in about 15 minutes, and the tahini, tamari and buckwheat noodles give your turkey a completely different flavor and style than yesterday's version.

In Soups

Top any cooked soup with shredded turkey for a healthy, hearty meal.

We love doing this with rice noodles for an easy turkey pho, like in this Immune-Boosting one.

We're also inspired by Angela Liddon's 10-Spice Vegetable Soup. The myriad spices that the broth and vegetables simmer in lend a deep, rich taste, sure to revive the day old turkey. Just pop in some shredded pieces near the end of the cooking time, allowing it to simmer in the broth for a few minutes to absorb the rest of the flavors. It's freezer-friendly so make a big batch and pack up the rest for a rainy day.
