Tanita de Ruijt is the chef at London’s favorite traditional Japanese udon-ya, Koya Bar. She has an intrepid appetite for all things food and culture, and is on a mission to preserve the traditional values of food cultures that have sustained healthy people for centuries, by linking flavor and fulfilment with health and nature. She is also the author of Tonic and Super Roots (both published by Hardie Grant).
