Many people avoid gluten because the protein found in gluten can be difficult to digest. I avoid gluten 90% of the time (because I generally feel much better without it). Gluten is commonly found in wheat, barley, spelt, rye and kamut. Today I’m sharing some guilt-free gluten-free baked treats made using rice flour, almond meal, zucchini, oats, quinoa and coconut flour. Enjoy!
Chocolate Cake with Caramel Sauce
Serves 12
Cake Ingredients
- ½ cup coconut flour
- ½ cup cacao powder
- 6 eggs
- ¼ cup coconut oil melted
- 1 cup maple syrup
- 1 teaspoon baking soda
Caramel Sauce Ingredients
- 1 cup dried dates
- ¾ cup coconut milk
Preparation
Combine coconut flour, cacao powder, eggs, coconut oil, maple syrup and baking soda in a bowl and mix well. Pour mixture (it is quite runny) into a round cake tin. Bake in a moderate oven for 40 minutes. Meanwhile, make the caramel sauce by combining the dates and coconut milk at high speed in your blender. Once the cake is cool, top with the caramel sauce and serve.
Choc Zucchini Brownies
Serves 8
Ingredients
- 1 zucchini (finely grate and then squeeze all moisture out)
- 1 cup almond meal
- 1 egg
- ¼ cup Greek yogurt
- 2 tablespoons cacao powder
- 1/3 cup honey
- ½ cup dark chocolate chips
- 1 teaspoon baking soda
- Pinch of salt
Preparation
Combine all ingredients in a bowl and mix well. Pour mixture into a lined loaf tray and bake in a moderate oven for 1 hour. Once cool remove brownie from loaf tray, cut into 8 brownie slices and serve.
Almond and Orange Cake
Serves 12
Ingredients
- 3 cups almond meal
- 3 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla powder
- ½ cup orange juice
- 2 tablespoons honey
Preparation
Mix all ingredients in a bowl until well combined. Pour into round cake tin and bake in a moderate oven for 1 hour.
Choc Chip Cookies
Serves 12
Ingredients
- 1 ½ cups almond meal
- ½ cup rice flour
- ¼ cup honey
- ¼ coconut oil melted
- 1 egg
- ¼ teaspoon baking powder
- 50g dark chocolate roughly chopped
Preparation
Place all ingredients into a bowl and mix until well combined. Form mixture into 12 balls and press each ball onto a lined baking tray. Bake in a moderate oven for 8-10 minutes.
Jam Drop Biscuits
Serves 12
Ingredients
- 1 ½ cups almond meal
- ½ cup rice flour
- ¼ cup honey
- ¼ coconut oil melted
- 1 egg
- ¼ teaspoon baking powder
- 3 teaspoons berry jam
Preparation
Mix almond meal, rice flour, honey, coconut oil, egg and baking powder in a bowl until well combined. Form mixture into 12 balls and press each ball onto a lined baking tray. Make a small indent in the center of each biscuit with your finger. Fill the indent with berry jam. Be careful not to overfill. Bake in a moderate oven for 8-10 minutes.
Baked Oatmeal Muffins
Serves 12
Ingredients
- 1 egg
- 1 ½ cups almond milk (or your preferred milk)
- 2 ½ cups gluten free oats
- 2 mashed bananas
- ¼ cup honey
- 1 tablespoon cinnamon
- 1 ½ teaspoons baking powder
- 1 cup blueberries or raspberries or dark choc chips (whatever flavor you desire)
Preparation
Mix all ingredients in a bowl until well combined. Grease a 12 cup muffins tray with a little coconut oil. Divide mixture evenly into the 12 cup muffin tray. Bake in a moderate oven for 30 minutes.
Apple and Cinnamon Muffins
Serves 12
Ingredients
- 2 cups gluten free self-raising flour
- 1 egg
- ¾ cup almond milk (or your preferred milk)
- ½ cup coconut oil melted
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon vanilla powder
- ¾ cup chopped walnuts
- 3 green apples grated
- ½ cup honey
Preparation
Combine all ingredients in a bowl and mix well until combined. Grease a 12 cup muffins tray with a little coconut oil. Divide mixture evenly into the 12 cup muffins tray. Bake in a moderate oven for 20 minutes or until golden brown.
Carrot Cake with Frosting
Serves 12
Cake Ingredients
- 2 ½ cups almond meal
- 4 medium carrots grated
- 3 eggs
- ½ cup butter or coconut oil melted
- ½ cup honey
- ½ cup pecans roughly chopped
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1 teaspoon baking powder
Icing Ingredients
- 1 cup cream cheese, coconut cream or cashew cream
- 1 teaspoon cinnamon
- ¼ cup pecans roughly chopped
Preparation
Combine all cake ingredients in a bowl and mix until well combined. Pour mixture into a lined loaf tray and bake in a moderate oven for 40 minutes. Once the cake has cooled, mix cream cheese/coconut cream/cashew cream with cinnamon and spread over cake. Sprinkle with pecans and serve.
Choc Banana Loaf
Serves 12
Ingredients
- 1 cup almond meal
- ½ cup brown rice flour
- 3 bananas mashed
- 4 eggs
- 2 tablespoons coconut oil
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 100g dark choc chips
Preparation
Mix all ingredients in a bowl until well combined. Pour mixture into a lined loaf tray and bake in a moderate oven for 55 minutes.
Crunchy Peanut Butter Cookies
Serves 12
Ingredients
- 1 ½ cups almond meal
- ½ cup rice flour
- ¼ cup honey
- ¼ coconut oil melted
- 1 egg
- ¼ teaspoon baking powder
- 1 ½ teaspoons cinnamon
- 3 teaspoons peanut butter
Preparation
Mix all ingredients in a bowl until well combined. Form mixture into 12 balls and press each ball onto a lined baking tray. Bake in a moderate oven for 8-10 minutes.
Warm Chocolate Pudding
Serves 6
Ingredients
- 2 cups almond meal
- ½ cup cacao powder
- 4 tablespoons maple syrup
- 1 tablespoon coconut oil
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon vanilla powder
Preparation
Combine all ingredients in a bowl and mix until well combined. Pour mixture into a small baking dish. Bake in a moderate oven for 25-30 minutes. Serve warm with fresh berries.
Spiced Strawberry Loaf
Serves 12
Ingredients
- 3 mashed bananas
- 2 eggs
- 1 cup almond milk (or your preferred milk)
- 1 ½ cups quinoa flakes
- 2 cups gluten free oats
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1 ½ cups diced strawberries
Preparation
Combine all ingredients in a bowl and mix well. Pour mixture into a lined loaf tray and bake in a moderate oven for 55 minutes.
Chewy Chocolate Cookies
Serves 12
Ingredients
- 2 cups almond meal
- ¼ cup coconut oil melted
- 1 egg
- ½ cup maple syrup
- ¼ teaspoon vanilla powder
- 1 teaspoon baking powder
- ¼ cup cacao nibs
- ½ cup cacao powder
Preparation
Mix all ingredients in a bowl until well combined. Divide the mixture evenly into 12 balls. Press each ball onto a lined baking tray. This mixture is quite sticky and will stick to your hands. You will have to wash your hands every few biscuits that you roll to prevent the mixture sticking to your hands. Bake in a moderate oven for 10-12 minutes.
