Richard Ingraham is private chef to actress Gabrielle Union and NBA veteran Dwyane Wade and has spent much of his career developing healthy versions of Southern comfort classics for the pair. This reinvented pancake recipe, featured in Ingraham's new cookbook, Eating Well to Win, was developed at Gabrielle's request. "Gabrielle actually brought the idea of having buckwheat pancakes to me after coming home from a long road trip, on which she’d had these amazing buckwheat pancakes she wanted me to reinvent," Ingraham says. "Of course, I took her up on the challenge and came up with this recipe. She really likes them because they’re gluten free, full of fiber (with the addition of oatmeal), and have an amazing flavor that comes from the spices and vanilla, and the addition of the maple cooked apples. She loves the fact that she can eat something delicious that's filling, flavorful, and not at all guilt-inducing." Here's the recipe.

Gluten-Free Buckwheat Pancakes With Maple Apples

Ingredients for pancakes

  • 2 cups buckwheat flour
  • ½ cup oat flour (I make my own by measuring out 1 cup of old-fashioned oats and putting them in a blender. I then blend them on high until it's like a fine powder.)
  • 2 tablespoons maple syrup
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon salt
  • 2 large eggs
  • 1½ teaspoons bourbon vanilla extract
  • 2 cups buttermilk

Ingredients for maple apples

  • 2 tablespoons unsalted butter, preferably pastured (can sub coconut oil, if desired)
  • 2 Granny Smith apples, peeled and sliced
  • ¼ cup pure maple syrup
  • 1 teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon salt

Method for Pancakes

  1. Combine all dry ingredients in a medium bowl and mix to fully incorporate.
  2. In a separate bowl, combine all wet ingredients and mix to fully incorporate.
  3. Make a well in the dry ingredients and pour in the buttermilk mixture.
  4. Mix the two just until they are combined (do not overmix).
  5. Pour ¼ cup of the pancake batter onto a hot, lightly oiled griddle.
  6. Cook for 1 to 2 minutes then flip pancakes once air bubbles begin to rise to the surface.
  7. Plate hot pancakes and garnish with maple apples.

Method for Maple Apples

  1. Brown apples in butter in a medium pan over medium heat.
  2. Once browned add in maple syrup, cinnamon, cloves, and salt.
  3. Reduce heat to low and simmer until apples are soft.
  4. Remove from the heat and serve.
