These days, there are tons of great, gluten-free
options for pasta, pastries, and yes, even bread. The next time you’re at the grocery store, pick up a loaf and try this delectable breakfast favorite!
- 4 slices gluten-free bread
- 2 eggs
- ½ cup almond milk
- 1 tsp. vanilla extract
- lemon zest (1 lemon)
- ½ tsp. cinnamon
- 1 Tbsp. coconut oil
- 1 cup frozen fruit (strawberries, peaches, blueberries, etc.)
- 1 tsp. raw honey
Heat coconut oil in pan.
While it’s heating, combine in a bowl eggs, almond milk, vanilla extract, lemon zest, and cinnamon.
Soak bread slices in mixture.
Once oil is heated, placed bread slices in pan and cook on low heat until egg is cooked through, flipping once.
Add frozen fruit and honey to pan.
Cook for 5 minutes or until fruit is completely thawed.
Add fruit mixture to bread. Top with a dash of cinnamon.
