Gluten-Free Recipe: Detoxifying 3-Herb Pesto
Bursting with flavor and fresh herbs, pesto brightens up any meal. Try drizzling it over veggies, using as a pasta sauce, spreading on pizza or crackers, or adding a dollop to salad dressings. Not only will pesto give your taste buds a zingy treat, it will provide your body with a myriad of health benefits.
Pesto is an easy-to-make sauce that can include any combination of fresh herbs you have on hand. This is your chance to get creative and experiment with different flavors. The best part is pesto will last in your refrigerator for about two weeks; it also freezes well. I made this combo to serve over zucchini "pasta.”
In this recipe, cilantro aids in cleansing your body of heavy metal toxins like mercury. Basil is a powerful antioxidant, and mint can improve digestion. In fact, each herb contains vitamins, minerals and antioxidants associated with health benefits.
Three Herb Pesto Recipe:
- 1/2-1 Lemon
- 1/2 cup extra virgin olive oil
- 1/2 tsp salt
- 1 cup basil
- 1 cup cilantro
- 1 cup mint
- 1/4 cup walnuts
Add herbs, olive oil, ½ of the lemon, salt and walnuts to a food processor or blender. Blend well and taste. Add the other half of the lemon if needed. Store in an air-tight container. It will last longer if the olive oil covers the herbs — you can add more oil when storing. Stir before using again.
