French Fries: The Healthier Way?

Who doesn't love french fries? Healthy eating doesn't have to mean abandoning this American classic. The New York Times today has an interesting piece, Beyond French Fries, in which healthy/vegetarian cookbook author, Martha Rose Shulman says:

I certainly don’t advocate eating fried foods frequently. But occasionally frying in healthier oils can make fiber-rich, nutrient-packed vegetables more palatable, helping to satisfy cravings for French fries or snack foods. Just watch your family tuck into an entire platter of batter-fried vegetables or sweet potato chips, or a pound of brussels sprouts seared in olive oil.

She also provides five easy "recipes to help conscious cooks overcome the fear of frying." You can read the full article and get the recipes here.
