Base recipe: Vanilla Chia Pudding


  • 4.5 cups plant-based milk of choice (canned coconut milk will be especially creamy, while more watery milks will give a watery result. My personal favorite is homemade coconut-cashew)
  • 3/4 cup dry chia seeds
  • 2 tablespoons vanilla extract
  • 1/2 tsp sea salt
  • 4 - 5 tablespoons maple syrup or sweetener of choice (to taste)


1. Stir together all ingredients until chia seeds are well distributed.


2. Let sit for 20 minutes, then stir again.

3. Place in fridge for at least an hour to thicken.

4. Divide into 5 equal servings and store in fridge for next 5 days.

Day 1: Vanilla Chia Pudding

Today, we're going with the basic recipe, as listed above!

Day 2: Pistachio Rose

Stir in 1 tsp rose water; crumble 1/4 cup shelled, raw pistachios on top. Drizzle with a bit of honey if desired.

Day 3: Chocolate Covered Strawberry

Stir in 1 tbsp raw cacao powder. Top with sliced fresh strawberries.

Day 4: Vitamin C Citrus Bomb

Stir in 1 tsp camu camu powder and zest of 1 orange. Top with bite-sized orange chunks.

Day 5: Raspberry Almond Butter
