Recipe: Healthy Vegan PB&J Smoothie
Who doesn’t get nostalgic thinking about a PB&J sandwich? As a kid, I grew up on ‘em. You probably did too.
But knowing what I know now, I definitely would NOT expose my child to the long list of processed and potentially toxic ingredients in your traditional peanut butter and jelly sandwich.
Here’s a short list of the junk I noticed when perusing a couple popular white bread, peanut butter, and jelly brands at the grocery store:
High fructose corn syrup, enriched white flour, sugar, partially hydrogenated palm kernel, soybean and cottonseed oil with TBHQ for freshness, caramel color, whey, cornstarch, soy lecithin, natural and artificial flavor.
All up, your “average” peanut butter and jelly sandwich has over 50 ingredients — most of which aren't real food.
This healthy PB&J smoothie recipe is a worthy alternative though — it’s ridiculously easy to make and delicious. And best of all, it’s free of gluten, soy, added sugar, and artificial, GMO-laden ingredients.
I tossed in a handful of kale for some extra nutrients (you can’t even taste it) along with some yummy fresh mint.
It’s a simple, guilt-free way to enjoy the beloved PB&J in liquid form.
Healthy Vegan PB&J Smoothie
- 1 cup organic kale (stems removed)
- ½ cup organic black or red grapes
- 2 tablespoons organic peanut or almond butter
- 1 tablespoon fresh organic mint
- 2 cups almond milk (coconut milk or plain ‘ole water works too)
- 2 handfuls of ice
1. Rinse the kale and mint leaves and remove the stems.
2. Blend all ingredients together for 30 seconds and serve.
Enjoy this recipe asis or toss in a scoop of protein powder after a workout to get a perfectly balanced blend of macronutrients.
