Food expert, author and Top Chef judge Padma Lakshmi has eaten pretty much everything. Today, she dishes on how she chooses to eat day-to-day, keeping the focus heavy on vegetables. Here are Padma's five tips for living a more plant-based diet.
1. Long live kale.
Some say it’s going out of style, but I am still in love. I sneak it into every meal from smoothies in the morning to savory soups at night.
2. Getting your veggies on demand.
After a long day on set, cooking is the last thing on my mind. My new obsession is meal delivery services. It’s a great way to guarantee veggies at your doorstep for every meal. Growing fresh herbs and tomatoes on my kitchen windowsill also keeps me connected to the food I eat.
3. Plant protein is the new meat.
Your favorite meat dishes don’t have to disappear when you choose to eat more veggies. Keep convenient meat alternatives, like mushrooms, lentils or black bean burgers on hand for simple and yummy substitutions.
4. Find a veggie buddy.
Like any lifestyle choice, pledging to eat more plant protein is much easier when you have a strong support system to back you up. To help me stick to a more plant-based diet, I’m asking my friends to join me in taking the Veg of AllegianceTM — a pledge to swap meat for at least one meal a week.
5. Find your flavor.
I’m an adventurous eater and love spicy food, so I’m always looking for new ways to upgrade my veggies, like sprinkling cayenne on roasted Swiss chard. Find a few favorites and experiment with different ways to prepare them so you look forward to eating them.
