Raw Vegan Tiramisu

This is the prefect radical self-love treat for yourself, or a decadent night with friends dessert and comes together in no time (as long as you soaked nuts the night before!)

Raw Vegan Tiramisu

For the crust

  • 1 cup almonds (soaked overnight)
  • 1 cup pitted dates (soaked)
  • 1 tablespoon ground coffee

For the Vanilla Cream

  • 2 cups cashews (soaked for at least an hour) or cashew butter
  • 1/4 cup liquid coconut oil
  • 1/4 cup dates (soaked)
  • 1 tablespoon vanilla extract
  • pinch of salt

For the Chocolate Layer

  • 1/3 cup coconut oil
  • 4 tablespoons cacao powder
  • 3 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract

Preparation

1. For the crust: Process ingredients in a food processor until combined. Press into a loaf pan or mold.

2. For the vanilla cream: Blend all ingredients until creamy, pour on top of crust and place in the freezer for 10 minutes.

3. Melt coconut oil in a pot over the stove. Turn off heat and add the rest of the ingredients. In the off-chance you don't eat all the chocolate layer in one sitting, Pour chocolate sauce on top of hardened vanilla cream, place in the freezer for 10 minutes, or until chocolate layer hardens.

4. Cut into bites and serve at room temperature. Enjoy!
