Veggie Tacos With Green Onion Ties
- 1/2 cup quinoa, cooked
- 1/2 cup canned black beans
- 1 cup broccoli, steamed
- 1 tomato, chopped
- 2 tablespoons salsa
- juice of 1 lime
- 4 corn or wheat tortillas
1. Combine the quinoa, black beans, broccoli, spinach, tomato and salsa in cast-iron skillet. Stir and simmer until warm, about 5 minutes. Squeeze fresh lime juice over entire mixture.
2. Wrap it up.
