Add a sprinkle of hemp seeds for a boost of protein and texture, and you have a beautifully balanced salad!

Summer Heirloom Tomato, Avocado and Herb Salad
Serves 2 (Recipe can easily be multiplied for more servings)
- 1 cup baby spinach
- 1 cup heirloom cherry tomatoes, halved
- 1 avocado, sliced
- 2 Tbsp. chopped fresh basil
- 2 Tbsp. chopped fresh cilantro
- 3 Tbsp. hemp seeds
- 1/2 tsp. sea salt
- 1/2 lemon, juiced
- 2 Tbsp. extra-virgin olive oil
Build your salads on two plates by assembling the ingredients in the order they are listed. Start with the spinach, then add the tomatoes and avocado. Sprinkle with the fresh herbs, hemp seeds, and sea salt, and drizzle with the lemon and olive oil.
