Easy & Light Lunch: Avocado-Tomato Lettuce Wraps

In the heat of the summer it’s crucial to have easy-to-prepare recipes on hand that don’t require the use of your stove or oven. This meal checks off all of the important boxes: full of fiber and proteins from the black beans, and healthy fats from the avocado. Plus, it’s so simple to throw together! Feel free to experiment with other types of beans or veggies.

Easy & Light Lunch: Avocado-Tomato Lettuce Wraps

Ingredients

  • 4 romaine lettuce leaves
  • 4 Tbsp. hummus (homemade or your favorite brand)
  • 1/2 cup black beans
  • 1/2 avocado, diced
  • 1 tomato, diced
  • 1/4 cup diced red onion
  • 1/2 lime or lemon

Directions

Arrange your lettuce leaves and spread 1 tablespoon hummus on each leaf.

Sprinkle the beans, avocado, tomato and red onion evenly over the romaine lettuce.

Squeeze the lime or lemon over your lettuce boats and season with sea salt and hot sauce (if desired). Enjoy immediately!
