Perfect Weekday Dinner: Lemon Garlic Noodles With Greens

Summer is officially here and we couldn't be more excited!

The summer season is a great time to eat fresh and light ingredients and this dish is both of those things and more! These summer noodles are dressed with lemon, garlic and olive oil and then topped with healthy greens like kale and spinach. It's a great meal for lunch, dinner or even to bring to your next barbecue.

Summer Lemon Garlic Noodles With Greens

Serves 1


  • 1 cup udon or soba noodles, cooked and rinsed with cold water
  • juice and zest of 1 lemon
  • 2 garlic cloves, minced
  • 1 Tbsp. olive oil
  • 1/4 cup kale, chopped
  • 1/4 cup spinach, chopped
  • 1/2 avocado, chopped
  • salt & pepper


1. Combine cold noodles, lemon juice, garlic, olive oil and kale together and massage using your hands to break up noodles and to loosen up the kale.

2. Top with spinach, avocado, salt, pepper and lemon zest.

Serve and enjoy!
