My son loves honeydew with a passion, and last year we decided to plant some honeydew melons to satisfy his desire. We got many more than we bargained for, so I was challenged to create smoothie recipes for our entire family. This recipe was the favorite by far. The honeydew’s gentle flavor is lightly accented by fresh mint from the garden, and the raw cashews add a creamy protein option. My son suggested a banana, but barely a half was needed to keep this smoothie sweet and fresh.
- 1 generous cup honeydew melon, cubed
- 1/4 cup raw cashews (preferably soaked overnight)
- about 1/8 cup fresh mint leaves to taste
- 1/2 frozen banana
- 3/4 cup fresh almond milk or milk of your choice
Place all ingredients in a high speed blender and blend!
