Power Up With This Tomato & Basil Breakfast Frittata!
I am a firm believer that it's very important to set aside time every morning to sit down and eat a healthy breakfast. A nutritious morning meal will get your day started right and will recharge the brain and body allowing you to be more productive and efficient. This frittata recipe is both delicious and nutritious. Spinach, Tomato and Basil Frittata
- 6 whole eggs
- 3 egg whites
- 6 oz fresh spinach, stems removed
- 2 tomatoes, thinly sliced and seeded
- 1/2 cup onion, finely chopped
- 1/2 teaspoon dried basil leaves
- 1/2 teaspoon fresh or dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- Extra virgin olive oil spray
In a large bowl, whisk together eggs, basil, oregano, salt and pepper. Fold in spinach, tomatoes and onion.
Coat non-stick skillet with olive oil spray and place over medium heat.
Pour mixture into skillet and cook on medium-high.
As eggs begin to cook, use spatula to lift edges of eggs, allowing uncooked egg to fill in under cooked parts.
Reduce heat and cook for about 6 minutes, or until the eggs are set. If desired, transfer frittata to preheated broiler for 2 minutes to lightly brown the top.
Remove and let cool for 5 minutes before slicing and serving.
Pair frittata with a serving of fruit and enjoy!
