Classic Vegetarian Black Bean Tostadas
A fantastic vegetarian option, this Black Bean Tostada recipe hits the spot and will leave you full and satisfied. Make it with corn tortillas, and you’ve got yourself an extra-healthy meal!
Black Bean Tostadas
- 8 corn tortillas
- 2 15-oz cans black beans, rinsed and drained
- 1/4 cup hot sauce
- 2 tablespoons water
- 1/2 cup tomatoes, diced
- 1/2 avocado, diced
- 1 tablespoon onion, minced
- 1 tablespoon, jalapeños, minced (optional)
- 1/8 teaspoon salt
- 2 teaspoons freshly squeezed lime juice
For salsa, combine tomatoes, avocado, onions, jalapeños, salt and lime juice in a small bowl, and set aside.
Combine hot sauce, water and black beans in blender or food processor, and blend until smooth. Heat bean mixture in saucepan on low-medium heat or in microwave-safe bowl for 1 to 2 minutes.
Preheat oven to 350 degrees. Place tortillas on baking sheet or directly on oven rack, and bake for 3 to 5 minutes on each side, or until tortilla is crispy and starts to brown.
Top tortillas with black bean mixture, lettuce and salsa.
