Vegan Matcha Ice Cream
I have been on a matcha kick lately. Matcha in my morning smoothie, matcha for my post-workout drink, and matcha for afternoon tea. This whole leaf, nutrient-rich, powdered form of green tea has higher amounts of EGCG, loads of antioxidants, detoxifies the body, lowers cholesterol, and keeps you energized and focused without the "coffee buzz."
This stuff is too good not to incorporate into your diet! You can imagine my delight when I figured out I could make soft serve with matcha and it actually tasted GOOD! Feel free to get creative with this basic recipe:
- 3 frozen organic bananas, chunked
- 1 tsp. organic matcha green tea powder
- ¼ tsp. organic cinnamon
- splash of your favorite organic, nondairy milk
Combine all ingredients into a high-speed blender until smooth.
Top with berries, cacao nibs, or other super foods.
Dish out and enjoy!
