Side dishes can potentially be the most exciting part of a meal, yet often we end up with plain veggies or quinoa, lightly flavored with sea salt. They become more of filler than the star of the show.
The good news is that it doesn't take many ingredients to completely change that! This side dish is so easy to whip up and is great for lunches or leftovers since it's a cold dish!
Fun and Easy Side Salad: Curried Artichoke Rice
- 1 cup brown rice
- 1/2 cup vegannaise
- 1/2 jar (12 oz) marinated artichoke hearts, including marinade
- 1/2 tsp curry powderpepper to taste
- Black olives (optional)
Cook the rice as directed. Remove lid and let cool.
In a bowl, combine the rest of the ingredients. Stir in the rice and pepper to taste. Be careful with salt, I found that it didn't require it.
Serve and enjoy. You can also refrigerate for a few days and savor throughout the week.
