There are multiple reasons why I love this recipe for a quick heartwarming winter lunch. It’s simple with only two main ingredients, easy to prepare, nutritious and tasteful! Perfect for a weekday.
Sweet Potato Mash with Kale and Pine Nuts
- 2 sweet potatoes
- 6 big handfuls of chopped kale
- a small handful of pine nuts
- pinch of salt
Boil water in a pan fitted with a fan steamer. Peel the potatoes and cut them into small pieces. Place the potatoes in the steamer. Put a lid on and let them steam over medium heat for about 8 minutes.
After add the kale on top of the potatoes and continue steaming for another 4 minutes with the lid on.
In the meantime toast the pine nuts in a dry skillet, stirring frequently until golden.
When finished steaming, remove the potatoes and kale from the steamer into another sauce pan. Add a pinch of salt. Use a potato masher to mash. If necessary add a tablespoon of the cooking water to thin it out.
Serve in a bowl and top with the pine nuts.
