Coconut Ice Cream Sundae (OMG It's Vegan!)

Yes, ice cream can be healthy! Here's an easy recipe for sugar-free Coconut Ice Cream with Paleo Ice Magic.

Serves 4

First make your Simple Coconut Ice Cream:


  • 1 can full-fat coconut milk
  • 1/4 cup rice malt syrup
  • 1/2 teaspoon vanilla powder
  • 1/3 cup raw cacao powder, optional (for a chocolate flavour)


Mix all of the ingredients in a blender, or using a stick blender, until smooth and creamy.

Pour into a freezer-safe container and leave in the freezer for five hours. Or use an ice cream maker, if you have one.

The ice cream may become a little too firm if left in the freezer too long. If so, allow it to thaw a little before serving.

Now make the Sugar-free Ice Magic.


  • 6 tablespoons coconut oil
  • 6 tablespoons raw cacao powder
  • 2-3 tablespoons stevia granules
  • pinch sea salt


Melt coconut oil in a small saucepan and add the rest of the ingredients, whisking well to dissolve the stevia granules. Let cool slightly, and then pour over Simple Coconut Ice Cream.

Store remaining sauce in covered container in the refrigerator and melt when you need to use it.
