The Perfect Kale Salad (Co-Starring Goji Berries!)

The best way to start any meal is with a huge green salad. It will satiate your appetite, nourish your body and prepare your stomach with lots of vitamins, minerals and active enzymes that will help you digest all the greasy food that’s coming next.

This particular kale salad is my favorite, as its ingredients will help you cleanse the digestive tract before filling it with some more food. It has lots of fiber, which will help eliminate any waste hidden in the intestines and the citrus will undo any fatty heap stuck to the digestive wall. It is also full of excellent plant-based amino acids, polyunsaturated fats, and great antioxidants.

Ingredients:

  • 1 bunch of lacinato kale (destemmed)
  • 1 ripe avocado (large)
  • ¼ cup raw white sesame seeds
  • ¼ cup Goji berries
  • Juice of 1 lemon

Directions:

Chop the kale and place it in a nice bowl.

Peel the avocado, add it to the bowl and massage the kale with the avocado using your hands.

Pour the juice of the lemon over the salad.

Sprinkle the sesame seeds and the Goji berries on top.
