A while ago, we decided to trade commercially available energy bars for the homemade kind. After a little trial and error, we came up with this recipe based on prunes mixed with grains, nuts and seeds, which is healthy, tasty and totally natural. Even better: they’re easy and fast to make. Perfect for a pick-me-up before or after a run, slipping into a gym bag or an afternoon snack.
If you’re going sugar-free, skip the chocolate and agave syrup — however, we like these best with them!
Ingredients (makes approximately 50 bars):
- ½ cup large flake oats
- ½ cup pitted prunes
- ½ cup pumpkin seeds
- ½ cup sunflower seeds
- ½ cup walnuts
- 2 Tbsp agave syrup
- 150g dark chocolate (slivers or chips)
- 125g unsalted butter
- 2 Tbsp coconut milk
Put walnuts and seeds in a food processor with a metal blade and pulse. Add prunes, agave syrup, chocolate chips and oats. Pulse mixture until well blended, with a nice texture. Set aside in a bowl.Melt butter in a pan over medium-high heat.
Add the prune mixture and coconut milk and stir for a few seconds. Remove from heat.
Line a large baking pan (try a 12 x 5.5 inch pan) with aluminum foil. Place a layer of wax paper over it. Mold mixture into a log and place on top. Wrap tightly the aluminum foil and refrigerate for at least one hour.
Cut to desired size (2 x 2 inches is what we do). Your energy bars are ready to go!
Approximately 150 calories per serving (2 x 2 inch / 60 grams sized bar).
