My hair and scalp both get pretty dry, and after I use coconut oil, I notice that my scalp feels better and my hair feels softer.

Coconut oil is a fantastic cooking oil because it's stable and can withstand high heat. Vegetable oils oxidize quickly and become rancid at high temperatures. Try using coconut oil when sautéing, baking, or roasting.
I love cooking with coconut oil. It gives food a nice flavor, and I use it when I sauté vegetables, fish, and chicken, and when I roast vegetables. I also consume it raw by adding it to my smoothies and mixing it in my oatmeal.
