Quinoa For Breakfast? With This Recipe, Go For It!

Whether you follow a plant-based diet or not, how much fun is it to eat pudding for breakfast?!

I have a friend who eats oatmeal every day for breakfast, but she called me one day and said, "I can’t do it anymore, I am so tired of oatmeal, what else can I eat for breakfast?”

I said, “Why not pudding?”

"Pudding?" she replied. "Isn’t that really unhealthy for breakfast?” Not my quinoa breakfast pudding!

Quinoa is an ancient pseudograin that contains all the essential amino acids your body needs, so quinoa is perfect for breakfast. It will fill you up and keep you going until lunch time.

Quinoa Pudding


  • 1/2 cup quinoa, rinsed
  • 1 cup organic apple juice
  • 1 cup water
  • pinch sea salt
  • 1 cup organic unsweetened apple sauce
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1/4 cup cashew butter
  • 1/4- 1/3 apple butter
  • 1/2 tsp cardamom


Cook quinoa in water and apple juice for 20 minutes.

Once it's done, add in other ingredients and blend in a food processor until smooth. Put in fridge and enjoy.
