Quick & Easy Vegan Strawberry Cream Cheese Recipe

Vegan Strawberry Cream Cheese

Ingredients:

  • 1 cup chopped strawberries
  • 1 cup raw, soaked cashews (soaked for at least one hour)
  • juice of one lemon (squeezed)

Directions:

Drain and rinse the cashews. In a high speed blender, blend together the strawberries, lemon juice, and cashews until smooth. If too thick or chunky, add in 1 teaspoon of water as needed.

Spread it on your favorite vegan bagel, crackers, or even granola bars! This recipe will stay fresh in the refrigerator for about one week — if it lasts that long!
