Raw Almond, Pesto & Zucchini Pasta Recipe
Before I became vegan, pasta was a staple of my diet. But now that I no longer eat gluten, I make most of my pasta dishes out of zucchini.
Zucchini is SO good for you, and it's delicious when shaved and tossed with olive oil and an acidic dressing like .
- 2 zucchini, shaved long
- 4-5 large sun-dried tomatoes
- 6 artichoke hearts
- 10 raw almonds
- Bunch of basil
- (Optional: fresh corn, peppers, mushrooms or carrots)
Shave the zucchini and then put the remaining ingredients in your food processor.
- 2 cloves garlic
- 1/2 cup olive oil
- 2 tsp lemon juice
- 3-4 drops of lemon essential oil
- 2 drops basil essential oil
- 2 drops thyme essential oil
- Himalayan sea salt
- Cracked Pepper
Once dressing is mixed toss all ingredients together and assemble to your liking on a plate.
Added bonus: Top with chia seeds!
I use essential oils in my recipes because of their amazing therapeutic properties. You simply can't get that same amount from the fruit or herb itself.
Lemon Oil: Very refreshing and widely known for its cleaning benefits; also a mood elevator!
Basil Oil: Extremely restorative and calming; also aids with digestion and helps get rid of inflammation.
Thyme Oil : Helps improve circulation, acts as an antioxidant and is extremely cleansing; it's also known for killing pathogens.
