Vegan Recipe: Basil Watermelon Gazpacho

Light, refreshing and sweet, fresh watermelon is a true summer treat! It's low in calories, full of antioxidants, and packed with vitamins A, C and B6. Fresh watermelon slices are a classic summer snack, but for a slightly more complex taste, try this recipe for Basil Watermelon Gazpacho. It's a perfectly refreshing mix of salty, savory and sweet. Enjoy this chilled summer soup on its own, or served with grilled veggies at your next barbecue!

Basil Watermelon Gazpacho

makes 4 servings


  • 6 cups cubed fresh watermelon
  • 1 cucumber, peeled and chopped
  • 1/4 cup chopped red onion
  • 2 tablespoons olive oil
  • 1/4 cup chopped basil
  • 1/4 teaspon salt
  • 1/4 teaspoon pepper


Chill watermelon and cucumber in refrigerator ahead of time. Combine all ingredients in blender or food processor until roughly smooth (a few chunks are good!). Enjoy right away!
