I made a healthy fried rice the other day and loved it! While making quinoa I had a wonderful idea: fried quinoa! It adds some extra protein and deliciousness to the dish.
- 2 1/2 cups cooked quinoa
- 1 medium yellow onion
- 1/2 - 1 cup fresh or frozen peas
- 1 diced carrot
- 1 1/2 tbsp soy sauce
- 1 tsp sesame oil
- 2 eggs
- your preferred oil for frying
Warm about 1 tbsp of oil in a large pan. Add in the carrots, peas, and onions. Sauté until the onions start to turn brown.
Add in the quinoa and cook for about 3 minutes (add more oil if needed). Evenly distribute the soy sauce and stir.
Crack each egg and stir until the eggs are cooked thoroughly.
Take the pan off the heat and stir in the sesame oil.
