East meets West in this fun-and-easy fusion bowl that will nourish you in cold weather. Yum!
- 3-5 leaves of your favorite type of kale
- 1 sprig green onion
- 5-7 stems of cilanto
- Half avocado
- Half lemon
- Nama shoyu
- Soy sauce
- Nori (salted or plain, up to you) strainer
- Small ramekin
Step 1: Prepare all your greens. Chop up cilanto and green onion, hand tear kale into small pieces, slice up the avocado and lemon.
Step 2: Pour soy sauce and nama shoyu in ramekin to taste. You may need to add a little bit of water to dilute. Add a dollop of wasabi.
Step 3: Cook noodles. Soba noodles cook fast, so be aware of timing.
Step 4: Strain noodles, place into bowl. Add all the greens on top. Kale first, then cilantro, then green onion. Tear nori and add in. Squeeze lemon to taste. Place avocado on top of all of that so it looks pretty.
Step 5: Pour in the sauce in the ramekin and eat up!
