Lunch breaks are often overlooked or are just flat out neglected. But lunchtime doesn't have to mean boring sandwiches, unhealthy takeout, or mystery leftovers from last week's dinners.

In fact, your lunchtime is meant to be one of the biggest, healthiest meals of the day. Your midday meal is meant to be enough to refuel you from the morning and keep you fueled for the afternoon ahead. And if you eat the right combo, you'll feel energized and full, rather than sluggish and tired.

This quick lunch comes together in no time and you can keep the ingredients on hand to make fresh, even in the busiest and most cramped offices. Avocado is full of healthy fats to keep your brain working steady and your belly full. The chickpeas offer a blend of protein and carbs to keep you energized. And your tomatoes are packed with nutrients and antioxidants to round out this healthy meal. If you're vegan, substitute some cashew cream for the protein-packed Greek yogurt.

With fresh ingredients and tons of nutrients you're sure to not only look forward to lunch, but you just might fall in love with it!

Deliciously Simple Lunchtime Tacos

Serves 1


  • 2 sprouted corn tortillas
  • 1 avocado
  • 1 tomato
  • 1/2 cup chickpeas
  • 1-2 Tbsp. Greek yogurt
  • 1 tsp. chili powder
  • sprinkle of sea salt


Warm tortillas on the stove, or set out at room temperature before eating (if no stove is available). In a bowl, combine chickpeas with chili powder.

Fill tortillas with chickpeas, tomatoes, and avocado. Sprinkle with sea salt and top with Greek yogurt.
