Avocado is full of healthy fats to keep your brain working steady and your belly full. The chickpeas offer a blend of protein and carbs to keep you energized. Deliciously Simple Lunchtime Tacos
- 2 sprouted corn tortillas
- 1 avocado
- 1 tomato
- 1/2 cup chickpeas
- 1-2 Tbsp. Greek yogurt
- 1 tsp. chili powder
- sprinkle of sea salt
Warm tortillas on the stove, or set out at room temperature before eating (if no stove is available). In a bowl, combine chickpeas with chili powder.
Fill tortillas with chickpeas, tomatoes, and avocado. Sprinkle with sea salt and top with Greek yogurt.
