Caesar salads can be packed full of healthy ingredients when made the right way. This kale caesar can be made ahead of time and is simple, tasty and a crowdpleaser — but it's much lighter than any traditional caesar you might find. Enjoy!
Vegetarian Kale Caesar salad with Homemade Garlic Croutons
- 1/2 baguette, cut into cubes
- 1 large clove of garlic, pressed or finely diced
- 2-3 Tbsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 12 oz (approximately 8 cups, packed) dino (or other) kale, shredded or thinly sliced
- 1 cup of vegetarian caesar dressing
- 1/2 cup Parmesan (optional)
Preheat oven to 400 degrees Fahrenheit.
In a small bowl combine olive oil, garlic, salt and pepper and mix well.
Place bread on a baking pan and drizzle with olive oil mixture. Use hands to mix well and ensure that bread is evenly covered. Bake for 15-20 minutes or until bread is browned. (This can be done ahead of time).
Combine kale and dressing in a large bowl and mix well. Let sit approximately 10 minutes or until kale starts to soften. Add croutons and more dressing if desired, mix again. Serve at room temperature with additional Parmesan if using.
This salad can be dressed up to an hour ahead of time to allow the flavors to mix and kale to soften.
