This is my favorite pasta dish for a number of reasons. It ticks all the right boxes in term of nutrition, is seriously tasty, and, best of all, it couldn't be easier to make! The salmon provides plenty of omega-3s, which are nicely complemented by the omega-6's found in the olive oil. The spinach, parsley and tomato provide great sources of antioxidants such as vitamin C and vitamin A. Fresh tomato is also rich in potassium, parsley in vitamin K, and spinach in iron.
To add to the mix, lemon juice also packs a punch of vitamin C, and by using whole grain pasta you get three times the amount of fiber compared to regular spaghetti.
Easy Hot Smoked Salmon Spaghetti
- 1 fillet hot smoked salmon
- 1 portion organic whole grain spaghetti
- 1 handful spinach leaves
- 1 handful Italian flat leaf parsley, chopped
- 1 small fresh tomato, diced
- Juice from ½ lemon
- A drizzle of olive oil
Cook pasta according to package instructions.
While this is bubbling away, wash and prepare rest of ingredients.
Once pasta is al dente, drain, leaving a little (about a tablespoon) of the cooking water in the pasta.
Flake salmon fillet into pasta and add all other ingredients to the saucepan.
Fold ingredients through over heat.
Serve and enjoy!
