When I was a little girl, I use to eat ice cream every day — until one day, my second grade teacher made a random comment during class. She was talking about how much she loved ice cream, but she said if she ate it every day, she'd be as big as a cow. I thought, "I don't want to be as big as a cow," and I focused on reducing my ice cream consumption.
As an adult, I still love ice cream. It's my favorite dessert. However, my newest obsession is finding healthier alternatives to the usual sugar-filled desserts.
This raw version was delicious and easy to make!
Coconut Chocolate Chip Raw Ice Cream
- 1 cup cashews raw
- 2 cups coconut meat
- 1/2 cup raw honey
- 2 tsp vanilla extract
- 1/4 tsp sea salt
- 1/4 cup coconut oil
- 3 tbsp raw cacao nibs
Mix all ingredients, except cacao nibs, in a blender until creamy, then add to your ice cream maker and follow your manufacturer's instructions. When it's done, mix in 3 tablespoons raw cacao nibs. Enjoy!
